CHEF EXAR MATUTE

Deep, rich, home roasted and home cooked....

Originally from El Salvador, Chef Exar has been cooking in the U.S. for 15 years. He began cooking in Palo Alto, California, where he built deep flavor into southern foods for Nola, a New Orleans inspired restaurant.

 

He began working completely from scratch and with pure, local ingredients at Google's Pure Ingredients Cafe run by Bon Appetite. In Indiana, he continued as a Sous Chef with Bon Appetite and also began cooking as part of the team at the James Beard nominated Bridges Restaurant in downtown Greencastle. 

Chef Exar loves to build rich flavors, working from scratch with quality ingredients to create great food in a relaxed atmosphere.  The Covered Bridge Cafe, his first restaurant, is a joint project with Sergio Mesa, the owner of Taco Wapo in Greencastle.
